Bananas combine well with other ingredients such as nuts and chocolate chips, but cranberries always seem to be a favorite. Recipe makes about 30 slices.

• Preheat oven to 350°F (180°C)
• Two 81?2- by 41?2-inch (1.5 L) loaf pans, greased and floured

1 package (18.25 oz/515 g)  white cake mix
4 oz     cream cheese, softened
1 egg
1 1/2 cups mashed ripe bananas
1 1/2 cups fresh cranberries

In a large mixer bowl, combine cake mix, cream cheese, egg and bananas. Beat on low speed until smoothly blended, about 2 minutes. Batter will be stiff. Fold in cranberries. Spread batter in prepared pans, dividing evenly. Bake for 45 to 50 minutes or until a tester inserted in center comes out clean. Cool for 20 minutes in pans on a wire rack, then remove loaves and cool completely.

My Thoughts: This is a super easy-to-read cookbook containing 288 pages, 300 mouth-watering recipes and nice colorful photographs of some of the prepared recipes. The book starts out with sections on baking equipment, teaching you about ingredients, cake baking tips & techniques, tips for frosting layer cakes, tips for finishing cakes and tips for storing & thawing the cakes you have prepared.

Then the book goes into the chapters which are: single-layer cakes, multi-layer cakes, tube & bundt cakes, angel food cakes, cheesecakes, coffee cakes, loaves & muffins, cookies, bars & squares, other desserts, special-occasion desserts, frosting & glazes and toppings. This is one beautiful cookbook that flows nicely from cover-to-cover.

Since receiving this cookbook, I have made several of the recipes. I have made the peach cobbler, spicy oatmeal raisin cookies and the chocolate banana coffee cake. All of the recipes start from a boxed mix and you add the other ingredients to the mix to turn it into something super special. The recipes are easy to understand and all ingredients are readily available.

This is a fabulous cookbook and I can’t wait until we get moved into our new home so that I can get busy again trying out even more recipes in this awesome cookbook! If you ask me, it has quickly become my baking bible! I love it!
