New Domino Light Sugar and Banana Nut Muffins Recipe

Today I would like to talk to all of you about the new Domino Light Sugar which is a all-natural sugar and Stevia blend. Hubby and I are both on diets and trying to eat healthier foods with less calories. The problem with our diets is that I absolutely love to bake and bake almost every day. I received a package of Domino Light Sugar and I was excited to try it out in a few recipes here in my home. Here is the first recipe that I used it in.

Banana Nut Muffins Recipe

Domino Light Banana Nut Muffins Recipe

2 cups all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3 large ripe bananas
1/2 cup Domino Light
3/4 cup unsalted butter, melted and cooled
2 large eggs
1 1/2 tsp. vanilla extract
1 cup chopped walnuts or pecans

Note: I omitted the nuts since I am allergic to walnuts and pecans. This recipe will make approximately 2 dozen average sized muffins.

Preheat oven to 350 degrees F. Lightly grease two 12-cup muffin pans, or line with paper baking cups. In a medium bowl, combine flour, baking soda, baking powder and salt. In a large bowl, with an electric mixer on medium speed, combine peeled bananas and Domino Light, beating for about 3 minutes. Add melted butter, large eggs and vanilla extract; beat well, occasionally scraping down sides of bowl. Reduce speed and gradually add dry ingredients, mixing until just combined. Fold in nuts. Spoon batter into prepared muffin cups until half full. Bake for 18-20 minutes or until a toothpick inserted in center of muffin comes out clean. Remove and let cool. Store muffins in an airtight container in the refrigerator for up to one week. Enjoy!

I made the Domino Light Banana Nut Muffins Recipe and let me tell you, it’s a really easy to make recipe and the muffins come out of the oven delicious and moist! This recipe has just the right amount of ripe bananas in it and you can NOT tell that we used Domino Light Sugar instead of regular granulated sugar at all. Two thumbs up!

We make a lot of homemade smoothies and fruit juices with our juicer machine so I decided to make us some watermelon juice and some watermelon smoothies. Instead of using granulated sugar, I used the Domino Light Sugar and again, you couldn’t tell that I replaced the sugar with a lower-calorie sugar at all. In addition, I really like how this sugar dissolves quickly and easily in cold beverages! Another two thumbs up on use!

Finally, I made a batch of homemade chocolate brownies and followed my normal recipe but instead of using granulated sugar, I used the Domino Light Sugar instead. I then baked my brownies in the oven as I normally do and then removed them for cooling time. Later that night I served the brownies to my family ala mode for dessert and they loved them. They had no idea that I had replaced the regular sugar with the Domino Light Sugar. Yeah!!!

Overall, I am super impressed with Domino Light Sugar and it’s already on my grocery shopping list for the next time I do my storing. I love that it’s all-natural, no funky after-tastes, doesn’t taste like a low-calorie sugar and it works great in every recipe that I tried it in. This Domino Light Sugar is now becoming a regular staple in my pantry closet!
