Classic 2 Cheese Fondue

Ingredients:
1 clove Garlic, halved
1½ cups dry White Wine
1 tbsp. Cornstarch
1/2 tsp Nutmeg
8 oz. Swiss or Emmental cheese, coarsely grated (2 cups)
8 oz. Gruyere cheese, coarsely grated (2cups)

Dipping Foods Such as Cubed French Bread, Fruit – Apples, Pears, Cut Veggies like Broccoli, Cauliflower, Small Boiled Potatoes, cubed.

Rub inside of a stainless steel pot with cut sides of garlic and throw away. Add wine to pot and bring to a simmer on stove over moderate heat. Combine grated cheeses in a bowl; sprinkle with cornstarch. Gradually add cheese to pot and cook; stirring constantly in a figure 8 pattern. This prevents cheese from balling up. Stir until cheese is melted and creamy. Season with nutmeg and a bit of pepper if desired. Do not boil or your cheese will separate! Simmer, stirring constantly until thickened 5 – 7 minutes.

If you do have a fondue pot, pour your mixture in there and light your fuel source to keep it warm during dinner. Enjoy!
